Grilling on Main is a high-energy, non-sanctioned BBQ competition where pitmasters go head-to-head cooking brisket, ribs, and chicken—with meats provided to competitors—while also creating a signature dish for the People’s Choice category. Teams will fire up their smokers on-site and compete for cash prizes, awards, and the coveted Grand Champion belt.

Judging Criteria

Flavor –

• Smoke should complement the meat but not overpower it
• Seasoning should enhance the meat without being too hot, sweet, salty, or bitter
• Sauce (if used) should blend well with meat, seasoning, and smoke
• Aroma should be pleasant and complement the flavor

Texture/Tenderness –

• Brisket: proper pull test; not too tough or falling apart
• Ribs: proper bite; not too hard or falling off the bone
• Chicken: tender with a juicy texture

Appearance –

• Box presentation and visual appeal
• Uniform and consistent cuts
• Bark or skin quality
• Sauce application should enhance—not overpower—the presentation
